Hunter Student Spotlight

 


Cornell AgriTech in Geneva, New York offers a Summer Research Scholars Program where undergraduate students participate in agricultural research projects with faculty, their graduate students, postdocs, and senior level staff.

Fermentation technology has the potential to produce delicious, environmentally sustainable high-protein ingredients at a large scale and low price. Congratulations to Balsamine Chen, Environmental Studies major, who will be participating in the Food and Beverage Entrepreneurship and Business Development project, working with experts from the New York State Center of Excellence for Food and Agriculture (CoE) to develop a food product using mycelium protein extract produced via liquid fermentation. She will also build a business plan with the goal of bringing the product to market, and learn about general business operations, supply chain issues, and more along the way.
